Sweet Chili Lime Tofu

I was hoping to get all our meals cooked for the week today, and bake some cookies to use up the vegan shortening in my fridge. But then I sliced my thumb this morning while chopping onions and didn't have any bandaids. After the sliced thumb I decided to just stick to the essentials, cooking for the week. Not baking gave me time to watch Grey's Anatomy and read, so it all worked out in the end!

I didn't make this tofu today but it was one of the delicious things I've made recently. It's kind of similar to Matthew's Delicious Tofu (one of my favourite tofu recipes) but a little different as it has lime juice and mint. Basically pan fried tofu with a sweet-sour-spicy-salty-sticky sauce. I imagine it would be good with tempeh too, if you're not scared of it like I am.

Sweet Chili Lime Tofu
Adapted from Vegan Yum Yum

Serves 4 (with vegetables and a grain)

1 package of extra firm tofu
3 tbsp sugar
3 tbsp reduced sodium soy sauce
1 3/4 tbsp fresh lime juice
1/2 zest of a lime
1/2 tsp red chili flakes
1/4 tsp salt
4 mint leaves, chiffonade

Prepare the sauce by whisking together all ingredients except the tofu.

Drain the tofu and cut it into small triangles. Heat a dry frying pan over medium heat. Spread the tofu out into a single layer, and cook for about 5 minutes. Flip and cook for another 5 minutes.

Turn the heat up to medium-high. Add the prepared sauce and stir to coat the tofu. The sauce should be bubbling. Turn off the heat, and serve.

I highly approve of grey's anatomy watching...it's kind of the best. Isn't this christina/hunt situation driving you CRAZY?!?!!?

I love sweet salty spicy flavors together so I need to try this!

I made this recipe last year and really loved it, unfortunately my husband and son weren't into the lime and mint flavours. I should make it just for myself one day!

Hope your thumbs heals quickly, I have had a few minor chopping accidents lately after such a long time without mishap.

oh no! your thumb! i hate it when that happens.... i usually plug along with at least making the recipe I was making.... although once i stopped to go to the emerg when i was making a pie. i popped the batter in the fridge and once i was stitched up, i came back to make the pie... and that's when i learned how wonderful pie dough is when left to rest and firm up in the fridge. it was even better than my mom's - same recipe - and she even agreed. :)

anyways, hope all is well and you didn't need to go to emerg.

Ooh, tasty! But oh, your thumb!

I love fried marinated tofu--maybe I'll take advantage of some of the new mint sprouting in our yard to make a batch of this. :)

glazed tofu is delicious and love other ideas - sorry to hear about your thumb - so frustrating when you are all prepared to be organised but probably good for you to get some relaxation in

This is an absolute "must-try" for me--sounds amazing! And of course anything from Vegan Yum Yum has to be good. :)

What an interesting combination of bright flavors- Mint, lime, and chili! I wouldn't have thought they go together, but I'll take your word for it.

Nice, a new version of my favorite tofu to try :)
Hope your thumb is feeling better. I hate when that happens as it always seems like it takes forever to heal!

I love that you served this over Kale and Quinoa. So healthy and two things I love. Whenever I visit your blog, I feel like you've invited me to dinner at what seems to be a very cozy home. now if only I could cyber-taste! :-)
