Garlic Cheese Bread


This is definitely not the glamorous photo this cheese bread deserves! Because it is just completely perfect, delicious, gooey, cheesy, and flavourful. I've never made cheese bread with mayonnaise before - turns out it's an excellent addition. The original recipe suggests that it serves 4, but I don't recommend eating 1 serving of this, unless you eat it with a giant plate of raw vegetables, as we did one night. So basically what I'm saying is you have to try it, but make it when you're serving lots of people or have lots of raw vegetables!

Garlic Cheese Bread
Adapted from The Pioneer Woman

Serves 6-8

3 1/2 cups grated Cheddar cheese
3/4 cups Monterey Jack cheese, grated
1/2 cups grated Parmesan cheese
1/2 cups mayonnaise
4 green onions, minced
1 loaf crusty French bread
8 tbsp butter
4 cloves garlic, finely minced

Mix cheeses with the mayonnaise and the green onions. Set aside or keep in fridge until you need it.

Cut loaf of bread in half, then each half into half again. Working 1/4 loaf at a time, melt 2 tablespoons butter in a skillet and add 1/4 of the minced garlic. Place 1 of the 1/4 loaves face down in the skillet, swirling it to soak up the butter and garlic. Allow bread to toast in the skillet, removing garlic if it starts to get too brown.

Repeat with remaining butter, garlic, and bread.

Spread cheese mixture on warm loaves and bake in a 425F oven until cheese is hot and bubbly, about 10 minutes.

Slice and serve.

sounds delicious - though I imagine a little would go a long way - I think I tried a similiar cheese on toast a while back with mayo and it was excellent

Now this just screams comfort food! It looks like it would be the perfect thing to make with Daiya "cheese", now that I've become addicted to it...

Oh my! That looks as delicious as it looks unhealthy. I can see what you mean about needing the vegetables!

I think I would need a serious nap to recover from that one.

Cheese on bread with garlic will never and should never require a glamor shot... it's cheese on bread with garlic :) (besides I don't actually think there's anything wrong with the picture :)). The addition of mayo sounds like a horribly delicious addition :). I can only imagine the creamy richness it adds. My problem wouldn't be stopping at 1 serving, it would be stopping before the plate is empty :).

oh my. i used to eat stuff like this practically a loaf at a time when i was a kid. brings back delicious memories. the bf will go crazy over this =D.

Yum! I never heard of mayo on my garlic bread before but if it comes out looking like your pictures do, I am in!

This is my favorite garlic cheese bread recipe. I was very skeptical about the mayo, but you're right, it's an excellent addition! I try not to make this very often because of how rich it is, but I crave it often. =P BTW, your photo totally captures the cheesy awesomeness of this recipe!

I like turning on the broiler for the last few minutes so that the cheese gets extra bubbly <3

Sorry, but real Parmesan cheese is not ever suitable for vegetarians. So many people get caught out by this that the Vegetarian Society in the UK is running a campaign to increase awareness: http://www.vegsoc.org/page.aspx?pid=850.
