Chocolate Scotcheroos


I can't believe it's been a week since I last updated! I thought I was being so good staying on top of updating my blog more often. Time seems to be going by so quickly, especially now that I've also taken up a habit of going to the gym almost daily. Not to say that's stopping me from eating baked goods...


Don't worry, no kittens were fed sugary things during this photo shoot. (Or ever for that matter.) She just gets very curious about all food.


I read about scotcheroos on David Lebovitz's blog a while ago and then one day recently just had to make them. I'd never heard of them before but I'm sure for some of you they're a regular thing. They're super easy to make and a great alternative to the regular rice krispy square (plus no marshmallows with gelatin, for you vegans/vegetarians out there). My boyfriend tried them, thought they were okay, so I took most of them to give away to my classmates while he took a few to work to eat. After eating a few more, he regretted me taking them to school because he really fell in love with them. As for me, I liked them but not a super favourite. Worth trying though, if for no other reason than to say scotcheroo many times!

Chocolate Scotcheroos
Adapted from Kellogg's

1/2 cup light corn syrup
1/2 cup sugar
1/2 cup peanut butter
3 cups Rice Krispies
1/2 cup semi-sweet chocolate chips
1/2 cup butterscotch chips

1. Place corn syrup and sugar into pot. Cook over medium
heat, stirring frequently, until sugar dissolves and mixture begins to
boil. Remove from heat. Stir in peanut butter. Mix well. Add Rice Krispies. Stir until well coated. Press mixture into 8x8 inch pan lined with parchment paper. Set aside.

2. Melt chocolate and butterscotch chips together in 1-quart saucepan
over low heat, stirring constantly. Spread evenly over cereal mixture.
Let stand until firm. Cut into 2 x 1-inch bars when cool.

aww your kitty is the cutest! these look like they must've been realllllly hard to cut! i always suck at cutting things like fudge and scotcheroos, but you did a great job!

I have no doubt I would absolutely love these. And LOVE to say "scotcheroo" over and over! ;)

So cool how close you can get your photos--I thought the squares were quite large until I saw them opposite your kitty!

my husband grew up on these and just adores them. Drives me nuts cause he thinks this is what real rice krispees are! yours look great!

And yum! I've never heard of Scotcheroos either. I'm going to have to try these (I think I have 90% of your blog starred in my google reader for yummies I want to make!). Peanut butter and rice bubbles and chocolate sound too good to pass up.

glorious, glorious butterscotch chips. i can eat more of those than any other morsel, and they taste nothing like real butterscotch. your treats are great, and your kitty is precious. :)

Where I am from a similar recipe is made using Special K instead of rice krispies (and then are called special k bars...)

Scotch, scotch, scotcheroo. Where does the name even come from? :) If you ask US, which you didn't, these look SO GOOD. Chocolate, PB and Rice Krispies...heaven.

Your Scotcheroos look delicious. I love the chocolate topping! And I totally relate to your comment on the accelerated passage of time. I'm getting to the gym these days too but I almost always feel behind on my blogging.

Those so soo good!! I wish I could get to the gym, I can't even get myself to do pilates at home (a way less stressful gym alternative for me). I seriously can't stand running or any kind of exercise where sweating is involved..hahah..

snooky doodle: Unfortunately I don't think toffee bits would work the same. You could melt the chocolate, put it on then sprinkle toffee bits on top. Or you could use peanut butter chips instead of butterscotch.

As someone else said, we always made these with Special K & called them Special K bars (the recipe used to be on the box, till they start emphasizing its low-calorieness). Sometimes the chocolate/butterscotch frosting (so yummy!) hurts my teeth, though, and when I make them, I make them without as often as with. (I also occasionally call it breakfast.)

I just found your blog, and I love the recipes! This recipe, the 'scotcheroos' is known in my family as 'rice krispies treats.' We don't even give those marshmallow ones the time of day. Thanks for the recipes!

Gelatine is unsuitable for vegetarians too, not just vegans - it's made from the collagen derived from animals' skin and bones.

Ahhh! I love these! But what butterscotch chips do you use? My boyfriend is vegan and all the chips I've found have contained milk fat. :/

Kenzielizabeth: I'm not vegan so I used regular butterscotch chips but I think you might be able to find vegan ones online?
