Snickerdoodle Muffins


Last Friday I finished my exams and was planning on coming home and having a baking extravaganza, but then I tripped on my cat and fell down the stairs. We're both fine, though I think he's a lot more fine than me because as soon as I felt his soft body under my foot I took all my weight off of him and slid down the stairs. Which has left me with a swollen foot. But since I was so looking forward to baking, I made a couple of more simple things, chocolate pots de creme and eggnog cheesecake bars. Unfortunately I'm not posting about those right now as I have this delicious snickerdoodle muffins that I made weeks ago but haven't had a chance to write about yet.


I recently discovered the insane deliciousness of snickerdoodle cookies. And then Peabody recommended her snickerdoodle muffins which of course I had to try. Though I was a bit skeptical about rolling a "muffin" in a cinnamon-sugar mixture, it worked out really well. I loved plopping the cinnamon-sugar coated muffin balls into the muffin tin. Maybe because they looked like little donuts or something.


As for how they turned out, the muffins were incredibly moist and a great sour cream muffin texture. They were slightly tangier than the ones I made before, though I wonder if that's because I used low fat sour cream instead of regular. While I did enjoy these muffins, I think I'll stick to snickerdoodle cookies, but keep this recipe on hand for other sour cream muffin based concoctions.

Snickerdoodle Muffins
slightly modified from Culinary Concoctions by Peabody

2 sticks unsalted butter
1 cup sugar
2 tsp vanilla
2 eggs
3/4 tsp baking soda
3/4 tsp baking powder
3/4 tsp cream of tartar
3/4 tsp freshly grated nutmeg
1 1/4 cup sour cream
2 1/4 cups all purpose flour

1/2 cup sugar and 1 TBSP cinnamon mixed together for rolling*

1.Cream the butter and sugar until soft about 3 to 5 minutes. Add in the vanilla. Add in the eggs one at a time and mix until each is incorporated.

2.In a separate bowl, mix together the flour, baking soda, baking powder, cream of tartar and nutmeg.

3.Add the flour mixture and the sour cream alternately to the egg-butter mixture in the additions. Start with the flour and end with the flour. Scrape the bowl occasionally.

4. Using an ice cream scoop, scoop out muffin batter one at a time and drop into a shallow bowl filled with the cinnamon sugar mixture. Roll the muffin around in the mixture until it is covered completely in cinnamon sugar. Place muffin into muffin tin. Depending on the size of your tins, you should get about 12 to 14 muffins. Bake them for approx. 20-22 minutes in a 350F oven or until they are golden brown.

*The original recipe calls for 1 cup sugar and 2 tbsp cinnamon, but this was way way too much for me. I ended up dumping maybe more than half of it.

mmm, these snickerdoodle muffins look great - Peabody's recipes seem to always be "no-fail," so I'm glad that her cookie-turned-into-a-muffin recipe worked out for you!! :0)

Ack, I feel you pain- My dog is always under foot, so she's been known to trip anyone nearby who isn't looking. Hope you feel better soon!

(Those muffins look so good, by the way. I just might have to try veganizing them...)

So sorry to hear about your fall, glad that you and your kitty are o.k. I actually tripped up my stairs this morning, and cracked my hubby up.

This is such a great blog, and all of your recipes look so yummy! I love making any type of muffins, and I'm going to have to try these out.

oh. my. your snickerdoodle muffins look amazing! they do directly remind me of a snickerdoodle - puffy, pale, sugary coating. i'd have to second on the veganizing comment. they look too good to pass up!

Glad you're not injured too badly. These look so good...I have thought about making them several times but didn't have all the ingredients. Some day! BTW, if you ever have extra cinnamon sugar mix, don't throw it out. Keep it around for cinnamon toast or some other baking adventure...it won't spoil!!! ;-)

those muffins look great!! if you are still looking for those mini-loaf paper pans, i got them at the diaso-like store in tinseltown. they were 4 for 2 or 3 dollars.

Who hasn't tripped over their own cat? Sorry to hear about your injury, but at least you didn't have to go to the emergency room. If it makes you feel better, I burnt my finger while making caramel sauce yesterday, so that makes two injured bloggers lol

I'll have to try your muffins. I made snickerdoodle bars the other day, but I need to upload the pictures. I too finished finals and on a baking extravaganza.

I couldn't wait to try this recipe! I did notice though that the ingredient list included nutmeg but was not included in the instructions.

I made them this evening and took them to a friend's for our little New Years get together. They don't stand a chance to make it to midnight. They are soooo good!!

These look incredible! I love snickerdoodles, and I love muffins. They remind me of a recipe I saw online not long ago for jelly donut muffins, which sounded quite similar except that they had a filling inside, and really it was the filling that pushed it over the edge for me to "too much work for something I'm not sure I'd like better." These don't have that problem, so I think I will try them indeed!

Just made these with my daughter! I substituted greek yogurt for sour cream. The batter tasted amazing. Can't wait to see how they turn out!

I haven't read through all of the other comments to see if anybody else tried this, but I only used half as much cream of tater, since you said they came out a little too tangy, and they came out amazing. I made mini muffins and got about 30 of them out of this recipe. But they only lasted a day. My family couldn't stay away from them. Thanks for the great recipe!

I tried to make these, but mine were a disaster! Well, as far as looks are concerned. They still taste great, though. I overfilled my muffin tins so they ran out everywhere. I felt like my batter was a little sticky/runny for rolling in the cinnamon sugar mix. I followed the recipe, but I'm not sure where I went wrong.

Is there anyway to make these lower fat and with less sugar? I am on a diet and one of these muffins would completely blow it for me. I love snickerdoodle cookies! I can imagine that these muffins are just as sinful. Then I would want to know what the nutritional values are to the lower fat and lower sugar make over muffins would be....

Just another random thought: You could try reducing the sugar and swapping out some of the butter for applesauce. Maybe use yogurt instead of sour cream. I haven't tried it though so I'm not sure how it would work out. Good luck!

My batter was too sticky to roll in the mix too. I tried two and gave up and just sprinkled it on the top instead. I thought about rolling the muffins in butter then rolling it in the mix after, but since I'd already put raw dough in the mix, I didn't. When I took them out, the tops came right off, and I ended up spooning the rest onto a plate. Not sure what I did wrong, but these didn't work for me at all :(

My daughter made a batch of these for an end of the year school party and they were delicious! Thanks for the awesome recipe! We made two batches. The first batch we just sprayed the muffin tin pan but they still stuck to it. The second batch we used the paper muffin cups and that was easy although they didn't rise as much. Not sure if that had any effect. Anyway....delicious! :)

I've been dreaming about making these and finally did last night. Unfortunately, I felt like the flavor fell flat. The cake part didn't seem to have a strong flavor. Much more like coffee cake, but not nearly as sweet. I did use light sour cream, could that have been the issue? One suggestion, if you put the batter in the fridge until it gets cold/stiff, it is significant easier to roll the dough in the sugar/cinnamon mix.

I have a banana bread recipe that calls for sour cream. I was out one day & used vanilla yogurt instead and it was more awesome than ever! I think vanilla yogurt would be a great substitute here as well!

When I seen this recipe I knew I had to try these out since we LOVE the cookies. So I made them tonight and they are delicious!! I Even had a Great idea to add a filling I had found that compliments it well. It's a "Cinnamon-sugar Cream Cheese Filling" by Walton and it goes pefect.

I just made these and I am not sure I will evere make them again. I don't know what your trick was for rolling them in the sugar and cinnamon but it was a nightmare. Some taste good but then there are others that taste like to much cinnamon that did not get melted. I think I will stick with the cookies as well.

I just made these and they turned out perfect! I used cupcake liners in my pans. I used a medium cookie scoop and got exactly 24 muffins in regular sized muffin tin pans. Thanks for the excellent recipe!
