Rustic Chocolate Chip Banana Oat Cake


We always have bananas in our house - one for everyday of the week for each of us. But rarely do they get brown enough to bake with, and rarely do I want to bake with them. But such an occasion occurred and I was inspired to make this rustic chocolate chip banana oat cake. Oats and oat flour are the base (I love oats!), with the addition of both mashed banana and diced banana. And chocolate chips (E was very happy about this). The cake was really moist and delicious. The only improvement would be to add walnuts next time, so I've included them in the recipe though I didn't add them to my cake.

PS I am currently obsessed with jigsaw puzzles!! Growing up I used to do puzzles when visiting my grandma, or at Christmas time with my mom. Costco had puzzles a couple of weeks ago so I bought 2 and now have been searching on Amazon for my next puzzles. Anyone else a puzzle geek like me?

Rustic Chocolate Chip Banana Oat Cake
Adapted from Oh She Glows

2 cups rolled oats, processed into a flour
1/2 cup rolled oats
1/2 cup Sucanat
1/2 tsp ground cinnamon
1/8 tsp ground cloves
1 tsp baking powder
1/2 tsp salt
2 tbsp safflower oil
2 medium very ripe bananas, peeled
1/3 cup applesauce
1/4 cup soy milk
1 tsp pure vanilla extract
Fold in: 1/2 cup dark chocolate chips; 1/4 cup walnuts, chopped; 1 ripe banana, cut into chunks

1. Preheat oven to 350F and lightly grease a 8 inch (4 cup) casserole dish or 8” cake pan. Take 2 cups of regular oats and process them in a food processor until flour like in consistency.

2. In a large bowl, whisk together the dry ingredients (processed rolled oats, rolled oats, sugar, spices, baking powder, and salt).

3. In another bowl, mix together the oil, applesauce, soy milk, and vanilla. Add in the two peeled bananas and smash into the wet ingredients until smooth.

4. Add the wet mixture to the dry and stir until just combined. Fold in the chips, walnuts, and chopped banana.

5. Spread into prepared pan and bake for 35 minutes at 350F or until a toothpick comes out clean. The cake must be cooled for at least 15-20 minutes before attempting to remove.

6. Store in the fridge for up to 3 days.

We actually NEVER have bananas around here since we all only like them when they're SUPER ripe! I'll have to buy some for this cake, though. Yum!

Just realizing that I haven't baked with bananas in quite a while, but I do always ripen and then freeze bunches in advance so that they're always on hand. They usually go into smoothies, but as soon as the heat breaks and I can think about turning on the oven again, this sounds like a delicious way to use some up!

We always have bananas, too, but that's for Rob, mainly. Usually apples are my go-to fruit, but now that summer has arrived, they have been pushed aside for all things local - peaches, nectarines, cherries, and the like. Rob still eats his bananas, though.

Bananas + oats + chocolate sounds divine. :)

We always have bananas and my intention is to bake with them but somehow I often forget to. On the topic of puzzles though I LOVE jigsaws and always have a hard time finding them at decent prices. Have you had a lot of luck through amazon? I usually get mine when I go to Vancouver island at a fun little games shop.

Kim: Yea I know what you mean, puzzles are expensive. :( Amazon's prices are decent though it seems. Where do you get them from on Vancouver Island? (Not that I go there very often but I do sometimes.)

At a great little toy/game shop called Interactivity Games in Victoria. We usually go to the Island once or twice a year and I always get a puzzle and/or a board game when we are there. Just picked up a 1000 piece Ravensberger for $20 which is better than I have seen around home and the selection is pretty good :)

Kim: Ohh I've never heard of that place. I will have to look it up next time I go, thanks! :) Are you from Vancouver? I saw some Ravensburger puzzles at a store in Metrotown for $20 but they might have been 500 piece and not 1000 piece.

It is a great little place on Fort street, at least I think its on Fort. Yes I am from Vancouver so I will have to check out Metrotown the next time I'm there. Although to be honest I try to avoid that mall as much as I can :)

Kim: Yea it's not the most fun to go there but it's close to us so unfortunately we go there pretty often! I think the store in Metrotown is called Mind Games. Costco recently had some 500 piece $9.99 puzzles but I think they're all sold out now. :( I only managed to get 2.

I made this last night, and it turned out well. I like the oat flour rather than regular, and I definitely like the addition of oats to banana bread. I added walnuts per your recommendation, and that was great! Thanks!

I made this last night and it was delicious--very dense. I used a mixture of dark and milk chocolate. I've never made anything off your blog that I didn't like :)

Anything baked with bananas is amazing!

My parents thought I was advanced as a baby because I could finish large puzzles in minutes. It was quite the let down when it turned out I was just crazy good at jigsaw puzzles haha
