Tracy’s Lentil Loaf
I've never tried making a lentil loaf, but I love lentils, especially red lentils, and I love vegetarian loaves like this so thought I must find a recipe and try it out! Plus vegetarian loaves are so much easier to make than burgers, which tend to fall apart. I liked this loaf and would make it again, but also want to try out some other versions to see what else is out there. (Please share if you have a favourite!) This lentil loaf was super easy to make and very versatile. I love how there are so many options for each thing, like you can use oats, rice, millet or bulgur. And for the sauce - barbecue sauce, tomato sauce or salsa.

Tracy’s Lentil Loaf
Adapted from Whipped
Makes 4-6 servings
3/4 cup dry red split lentils, cooked
1 cup oats (or leftover rice, millet or bulgur)
1 cup grated organic cheddar cheese
1/2 cup barbecue sauce (tomato sauce or salsa)
2 organic eggs, lightly beaten
1/2 cup chopped fresh cilantro (parsley, scallions, chives or mix)
2 teaspoons soy sauce
1 teaspoon garlic, minced
1 teaspoon dried oregano
(The options I chose: oats, tomato sauce, 1/2 cup green onions + 1/3 cup parsley)
Mix all ingredients together in a large bowl. Pour mixture into oiled loaf pan or casserole dish. Bake at 375 degrees for 45 minutes. Let cool for 5 minutes before cutting and serving.

This is a wonderful recipe. I love lentils too - easy to cook and great nutritional value.
Mmm this looks hearty and yummy. I've had an oatmeal lentil loaf bookmarked for months too to try. I should compare to see if they're similar :).
Even though I'm not a vegetarian, I'm super intrigued by this! I've recently discovered lentils and love them.
I've never made a lentil loaf before but I think Giada deLaurentis has one that I've been eying for a while. I'll have to try this!
Ohhh my!!! This looks delicious, and I have red lentils in the pantry right now too!! :) I love that this recipe seems a lot easier then the ones that include walnuts and seeds and all, those just don't appeal to me as much!
I love vegetarian loves - not only do they hold together but they are easier than shaping all those burgers
I have a recipe that I love that is similar with red lentils - http://gggiraffe.blogspot.com/2008/12/lentil-loaf-with-chutney.html - though I like the idea of oats instead of breadcrumbs - have lots of great nut roast recipes on my blog and can tell you that experience has shown me that loaf leftovers are often great in sandwiches or in a bolognaise pasta sauce
this loaf looks extremely delicious. I will have to make it, however I will have to find a substitute for the cheese. Any suggestions?
I just made a lentil loaf yesterday! Good stuff. I believe it is a recipe from Eat, Drink, & Be Vegan--it's called Sunflower Lentil Pie (but i made it in a loaf pan instead of a pie plate.)
I like the idea of cheese in it.
Pretty yummy served it with a salad. Went with tomato sauce but think ill go salsa next time :0)
