Pumpkin Chocolate Chip Loaf
Pumpkin quick bread is one of my favourite baked goods. Well in general whenever I see pumpkin anything I want it! However I've always been wary of the combination of chocolate and pumpkin, but I saw a recipe for pumpkin chocolate chip loaf in Baked: New Frontiers in Baking. (I want to make pretty much everything in this book but right now I'm especially fixated on the grasshopper cake!) Anyway, I gave the loaf a chance and while I really loved the loaf itself, I do prefer my pumpkin without chocolate.
Now that my finals are over, I can't wait to start on some holiday baking!! What are you all making?

Pumpkin Chocolate Chip Loaf
Adapted from Baked: New Frontiers in Baking
3 1/4 cups all purpose flour
2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ground allspice
1/2 tsp ground ginger
2 tsp baking soda
2 tsp salt
1 3/4 cups (15 oz can) pumpkin puree
1 cup canola oil
3 cups sugar
4 large eggs
1 tsp vanilla
1 1/2 cups (12 oz) semisweet chocolate chips
Preheat the oven to 350F. Butter two 9x5x3 inch loaf pans.
In a large bowl, whisk together the flour, cinnamon, nutmeg, allspice, ginger, baking soda and salt.
In another large bowl, whisk together the pumpkin puree and oil until combined. Add the sugar and whisk again. Whisk the eggs into the mixture, one at a time, followed by the vanilla. Add 2/3 cup room temperature water and whisk until combined. With a rubber spatula, stir in the chocolate chips.
Fold the dry ingredients into the wet. Do not overmix.
Divide the batter between the prepared pans. Gently knock the bottom of the pans against the countertop to even out the batter. Use the spatula to smooth the tops.
Bake in the center of the oven until a toothpick inserted into the center of a loaf comes out clean, 1 hour 15 minutes to 1 hour 30 minutes, rotating the pans halfway through the baking time.
Transfer the pans to a wire rack and cool for 15 minutes. Invert the loaves onto wire racks and cool completely before serving.

I love pumpkin and chocolate - that is definitely my favourite bread pudding combination so far - sounds odd but is fantastic - hope you enjoy your holiday baking and keep sharing it with us

Mmm, this looks like a great way to warm up the kitchen when it's pelting rain outside. After my fingers are frozen from bailing out our flooded storage room, I could cozy up to a warm slice of this.

Pumpkin and chocolate are great together! This looks moist and pumpkin-y, just like I like my pumpkin bread (who are we kidding? more like cake 8p). It's always kinda tricky for me to make anything for the holidays because we travel to my boyfriend's family gathering. Still, I try to contribute one thing at least and this year it's fudgy peppermint Oreo brownies. I've made them several times and they're always crowdpleasing.

I asked for the Baked cookbook for Christmas and I will absolutely cry if Santa doesn't bring it. Or, maybe, I'll just go buy it myself. Haha!

There are always lots of goodies we can make with pumpkins. It reminds me of the candies I made out of pumpkins. That was so much fun.

You know, I have just not been sold on the idea of chocolate and pumpkin together but seeing it in that book made me reassess. I'm totally with you - I LOVE that book and want to make everything. I made the chocolate coffee layer cake last night and it was a thing of beauty.
I love anything pumpkin! Who doesn't right. :-) I haven' t decided on what I'm baking just yet. Still trying to figure out what everyone's tastes are. This is the first year we're actually doing something big for Christmas on both sides of my family. Hope you're enjoying your break from school. Yay for finals being over!

I just saw their new cookbook at the book store yesterday and was swooning. I am hoping Santa helps a girl out.
I think I have only made cakes and pies from that cookbook but this recipe has me thinking I need to branch out!

I'd forgot all about pumpkin bread. I used to have that when we lived in the USA.
