Peanut Butter Waffles


I love waffles. I've discovered they make a great snack so I freeze them and then toast them when I want some. These peanut butter waffles are excellent - not too sweet and definitely peanut butter-y. They're kind of "heavy" or dense - maybe somewhere between a waffle and a biscuit? I'm not sure how to describe it but they're really good and I will definitely make them again!

Peanut Butter Waffles
Adapted from Vegan Brunch

Makes 4 six-inch round waffles or 6 four-inch square ones

3/4 cup natural peanut butter
3 tbsp maple syrup
2 tbsp oil
2 cups soy milk
1 tbsp cornstarch
1 tsp vanilla
2 1/4 cups whole wheat flour
1 tbsp baking powder
3/4 tsp salt

Preheat your waffle iron. In a large mixing bowl, mix together peanut butter, maple syrup, and canola oil until well combined. Separately, mix together the milk and cornstarch in a measuring cup and add to the batter along with the vanilla.

Add flour, baking powder and salt and mix until the batter is relatively smooth.

Spray the waffle iron with cooking spray and cook waffles according to manufacturer's directions.

I've always wondered whether or not the flavor of the PB would shine through in a recipe like this. Now that you've given it the thumbs up, I'll have to give it a try!

I recently made dense and delicious waffles too...and they are so great frozen & reheated in the toaster for later. I've never had pb waffles before, sounds good!

I didn't know you could toast waffles - I am such a waffle novice - I have got vegan brunch and am wondering if I can make waffles without a waffle iron

as someone who unashamedly slathers peanut butter on her pancakes, i think the idea of baking the stuff directly into the waffles is a great idea. also, best abby picture ever.

Johanna: Yea toasting waffles is a great way to reheat them and retain their crispness! I think a lot of waffle recipes can be made as pancakes? I'm not sure about these ones though because they are a bit dense.

I used to have a waffle maker, but after it broke, I never replaced it. These make me want to run out and buy a new one! (Of course, I'd have to sub the PB. . . ) ;)

Sadly I'm moving to a smaller apartment and will probably store my waffle iron to save space. Which means that I'd better try these delicious PB waffles before then!

I got Vegan Brunch a couple of months ago and had the EXACT SAME issue with the pumpkin pancakes. They were awful. These waffles, on the other hand, I will definitely make again.
