Marshmallow Crunch Brownie Bars


These are the most addictive baked good I've made in a long time. Not that a lot of other things I've baked haven't been delicious but these were just deadly. Not only are the flavours delicious (chocolate + marshmallow + peanut butter) but the texture combination is great too. Fudgey brownie, gooey marshmallow, chocolate peanut butter with rice krispies. I'm really hungry for dinner right now so I can't think of much else to say about these - just know that your life is incomplete without them.

Marshmallow Crunch Brownie Bars
Adapted from Buttercup Bakes at Home found on Nosh With Me & Culinary Concoctions by Peabody

Note: Most marshmallows contain gelatin (an animal product). You can get vegan marshmallows but apparently they're hard to find. Alternately, you can use marshmallow fluff which does not contain gelatin.

Brownie Ingredients:
4 ounces unsweetened chocolate
2/3 cup (1 1/4 sticks) unsalted butter
1 1/4 cup semisweet chocolate chips, divided
1 1/3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
4 large eggs, room temperature
2 cups sugar
2 teaspoons vanilla extract

Topping Ingredients:
1 bag mini marshmallows (I think mine was 7 oz)
1 1/2 cups semisweet chocolate chips
1 cup smooth peanut butter
1 tablespoon unsalted butter
1 1/2 cups Rice Krispies

Preheat oven to 350F. Grease a 9×13-inch baking pan with butter.

In a medium pot, melt the chocolate, butter, and 3/4 cup of the semisweet chocolate chips on medium heat. Stir occasionally while melting. Set aside and cool for 5 minutes. In a medium bowl, whisk the flour, baking powder, and salt together. Set aside. In a large bowl, place the eggs and whisk thoroughly. Add in the sugar and vanilla. Stir the melted ingredients into the egg mixture, mixing well. Stir in the dry sifted ingredients and mix well. Fold in the remaining 1/2 cup semisweet chocolate chips.

Pour the batter into the prepared pan, and spread evenly with a spatula. Bake for 25 to 30 minutes, or until a cake tester inserted into the corner of the pan comes out with moist crumbs.

Remove the brownies from the oven, and immediately sprinkle the marshmallows over them. Return the pan to the oven for 3 more minutes.

While the brownies are baking, place the chocolate chips, peanut butter, and butter in a medium saucepan. Cook over low heat, stirring constantly until melted. Remove from heat, add the cereal,and mix well. Allow this to cool for 3 minutes or so.

Spread the mixture evenly over the marshmallow layer. Refrigerate until chilled before cutting. Cut into 24 bars.

marshmallows are not vegetarian as they contain gelatin. Just thought you should know as you claim to be a vegetarian based site. I could care less what other people eat, I just hate to see people be misled.

When I was in Girl Guides I learned how to make "scrambled brownies" over the campfire. I'm very tempted to revamp this recipe next time I go camping, into a s'mores-brownie twist.

A word of warning to vegetarians reading this: make sure you buy vegetarian marshmallows. Marshmallows contain gelatin, which has animal bones in it.

my college dining hall makes brownies very similar to these, sans peanut butter. they look delicious, and can be tasty, but be careful - they are stickier and harder to chew than milk duds. but hey - those taste good too.

Mushrooms contain gelatin? That is news to me but not like I care I am an omnivore. It is a fungus and the gelatin is of that source however if you go back it was likely converted from animal bi products such as waste and death but all plants convert animal remains and waste into something they can use so in a way you can never completely remove animal from your diet even if its eaten in converted plant form.

It is possible to make marshmallows without gelatin, but the only recipe I have seen requires eggs. It uses Xanthan gum instead of gelatin.

Oh and I did type 'make marshmallow' which is a potential solution

marshmellows do contain gelatin, unless you buy specifically vegetarian ones.

OR, a much easier solution, and probably an easy substitute in a recipe like this, you could use marshmellow cream. marshmellow cream doesn't have gelatin in it since its not formed into a specific shape. it may be messier, but if its a concern you could always try that.

Marshmallows are not vegetarian - they contain gelatin. Gelating is made from boiled bones, skins and tendons of animals - eeew.

There are alternatives, but I've never seen it used in marshmallows.

HINT!!

I used a 12x9 pan (what the recipe called for and it was too small!)

Let the marshmellows completely cool before putting the topping on, dont start making the topping until it is cooled and put it on while it is still hot... that will help with spreading!

If they're available in your area, try using kosher marshmallows. Because regular gelatin isn't kosher, kosher marshmallows are made from either fish gelatin or vegetable starch, depending on the brand. :D

It is extremely difficult to spread topping (especially if it has cooled for 3 minutes as instructed) over warm marshmallows. To help, add an extra teaspoon of butter to topping while cooking (thins it). Also, Allow marshmallows to cool some. Mine just blended in, which was kind of good, because there was not enough topping to cover pan. I'm sure it will taste great with all those decadent ingredients, can't go wrong. Just won't look like picture, as topping swirled into marshmallow layer.

I made them last night. The topping is fabulous. The marshmallow layer is pretty much genius. But, I'm thinking I'll just hold back on the sugar and chocolate in the brownie section, because everytime I bite into each decadent square, it's like my tastebuds have been bulldozed. It's just way too much goodness, if that's possible. I really hope my neighbors are hungry.
