Sweetened Condensed Milk Cake
As soon as I saw Patricia's post about sweetened condensed milk cake I knew I had to make it. I'm drawn to anything where sweetened condensed milk is a star ingredient.
I thought it would be yummy to chop up some bittersweet chocolate so I divided the batter and added chocolate to half and made them into mini muffins, then put the other half of the batter in an 8x4 loaf pan. Unfortunately the mini muffins did not turn out so well I think because I really overcooked them, but also because the thing that's great about this cake is not just that it's moist and dense but that you can actually taste the condensed milk. And if you add something that has a strong flavour like chocolate you lose that. I loved how the loaf turned out and I know I'll be making this cake again.

I made mine in an 8x4 loaf pan and made about 16 mini muffins. I would recommend using a loaf or round pan, and if you do want to make mini muffins, make sure you take them out of the oven a lot sooner because this cake is not good at all when it's cooked too long.
300 mL can sweetened condensed milk
4 eggs
120 g all purpose flour
1/2 tablespoon baking powder
50 g unsalted butter, melted and cooled
Preheat the oven to 350F; generously butter a 9 inch round cake pan.
Place all the ingredients in a large bowl and mix well. Pour the batter into prepared pan and bake for 20 minutes, or until risen and a skewer inserted in the cake comes out clean (about 35 minutes).
Remove from the oven and place on a wire rack to cool completely before unmolding.

I think they do shipping, but I'm not sure how it works because I go there to buy my stuff. My cousin just got me some Chicago Metallic from Winners. I'm not sure if Vancouver has a Winners.
The only problem I have with ordering is I don't get to pick my own.. haha. I can't stand it when there are scratches on the pan! I know.. I'm so annoying.
Love everything with sweetened condensed milk, so this cake is something I am sure I will love...the cake looks just perfect:-)

If you like sweet condensed milk, you should really search more Brazilian dessert recipes. We use it in almost anything... I used to eat it by the spooon, kind of the same idea some people do with peanut butter.
This looks pure and delicious! I notice that your recipe uses weight measurements rather than cups. I know this is a more accurate way and I have been wanting to get a good quality kitchen scale so I could bake this way. Do you have one you would recommend?

Mallory: I have a Cuisinart electronic scale but I'm not sure that it's any better/worse than other digital scales out there. The best thing to do might be to either go to a specialty kitchen store and ask about the ones they have, or check reviews on Amazon.com. Definitely go for an electronic one though, not the cheap ones from Ikea that aren't electronic. And think about how heavy of things you want to weigh on there because some scales can weigh more than others. Mine can weigh up to 5 kg which is more than enough. Good luck on your search!
I'm so glad to know you liked the cake! I have received mixed reviews about it, but I truly believe that the ones complaining about the texture of the cake might have baked it too long as you say.

This cake is wonderfully easy and so delicious. I am a culinary student and find this recipe pleasing although at first the recipes first glance the batter scared me into thinking it wouldnt coagulate, so to say I cooked a drop like a pancake to see and everything was puffing up. I added 1/4tsp kosher salt and made half of my condensed milk into dulce de leche and then thinned it out with 1 oz of milk then folded it into the rest of the uncooked condensed milk. It gave it a nutty flavor but also left the condensed milk taste prevelent. I also made some more dulce de leche, maybe 1/2c thinned it out with a splash of milk and 5 minutes prior to unveiling my master piece, I spread the dulce on top of the cake and continued to finish out my 5 minutes. It made a caramel like condensed milk icing. I also used a sheet pan under the rack my cake was on so there was indirect heat to the bottom of my cake. It left the edges a light golden brown which was nice. I found that when doing this, at the very last minute I had to turn the broiler on low because there was a thin uncooked layer. If doing it this way you have to watch it real closely. It kind of puts the fun back in baking :) Even with the broiler method, the cake came out professionally nice and dissappeared while I was in the shower. I pilfered the tasty crumb nuggets left in my pan after being attacked by my boyfriend his mom and his sister, and found it a lovely cake that I immediatly made again. I eat it with my espresso. Super delicious!
