Oatmeal Coconut Chocolate Pecan Squares
I saw these bars on Everybody Likes Sandwiches and of course knew I had to make them. Oats, coconut, chocolate, pecans - how could I resist? At first when I tried them I was disappointed that there wasn't more coconut, but then I froze them and started to eat them out of the freezer. A little too often. They're really addictively delicious.

Adapted from everybody likes sandwiches
1 cup old fashioned rolled oats
1/2 cup flour
1/2 cup brown sugar
1/2 cup chocolate chips
1/2 cup unsweetened shredded coconut
1/4 cup chopped pecans
1/4 tsp baking powder
1/4 tsp salt
5 tbsp unsalted butter, melted and slightly cooled
1 egg
1 tsp vanilla
Preheat oven to 350F. Prepare an 8x8 pan with parchment paper or butter. Combine all the dry ingredients (oats through salt) in a large bowl. In a smaller bowl, mix together the melted butter, egg and vanilla. Mix the wet ingredients into the dry and stir until well blended. Pour the mixture into the prepared pan and smooth it out evenly with your hands or a spatula. Bake for 25 minutes and cool. Cut into 12-16 squares.

Those definitely look and sound worth getting addicted to - yum!!!
ooh, these look good! did you eat them frozen or let them thaw?
uhh anything with coconut is good. i had that same problem with these blondies i made. i had about half a batch left over, so i put them in the freezer bag thinking that i would eventually use them for something. well, i used them for midnight snacks for about 3 days until they were all gone. haha
Thanks everybody. =)
ttfn300: I ate them frozen! Mmm. Though I'm sure they're good thawed too.
Those look like a really good road snack. Almost all the components of the granola we have here at home.
Wow, these look incredible...! And maybe I could even fool myself into believe that they're granola bars with the oats, so it's not terrible to eat them all... ;)
I love coconut in anything! Yum!
These sound and look terrific. I was considering making cookies today, but think I may need to try these.

Totally irresistible! I am going to have to make these. . . oh, and I do think they'd be a perfect addition to the Lucky Comestible: Coconut series! Let me know if you'd like it included (just send me the permalink) and I'll add it to the list! :)
I wonder what these would be like with half the sugar...I think I will give it a try this weekend. I'm happy to hear they are good from the freezer. YUMMY. Thanks for the inspiration.
