Pomegranate Smoothie
This is the first beverage I've ever posted about, and possibly the last. I like trying out different drinks but I don't really care that much about making them at home. Except for smoothies, which I make with yogurt, frozen fruit and fruit juice. Not that I've been making many recently due to the cold weather. (Where are you summer? And who ever thought I'd be wanting summer to come and not relishing the cold weather?)
Anyway, so I subscribe to Everyday Food magazine but haven't been looking through the issues recently. I came across this pomegranate smoothie recipe and was both sad that I had missed it in the issue, but also happy that I had stumbled across it on the internet. It's really quite a perfect, delicious and healthy smoothie. The silken tofu gives it this really nice mouthfeel (a term I've gleaned from my food technology program) - as though there's heavy cream in there or something and it doesn't taste like tofu at all. And it's full of antioxidants, especially if you use frozen berries.
Pomegranate Smoothie
Adapted from March 08 Everyday Food magazine (found on Husband Tested Recipes From Alice's Kitchen)
1/3 cup silken tofu (about 3 oz.)
1 cup frozen mixed berries
1/2 cup pomegranate juice
1 teaspoon honey (add more if you like it sweeter)
2 ice cubes (or just omit because the frozen berries make them kind of pointless)
In a blender, combine all ingredients. Puree until smooth. Serve immediately. (If the smoothie seems too thick, just add a bit more pomegranate juice.)

looks great! I love the color, very deep and rich. I recently had some pomegranate limeade that was really good. Maybe I should give this a try!

What a summery, tasty drink- I think this would be just great as a quick snack. I don't often make smoothies, but maybe I'll give this one a shot.
An antioxidant in a glass that looks divine and I'll bet it's incredibly good. I've been a chicken not stepping outside of the rut of the strawberry and banana smoothie.
wow this looks amazing - I have only just started to make some smoothies at home occasionally because I have finally found the right equipment and I am right into pomegranate juice so I just want to run over to the shops and grab what I need for this! If only I had not just got back from them but this is on the to do list!

Perfectly lovely smoothie, the only improvement I would make would be to add 3 ounces of vodka and serve it on a hot summer evening :)
Regarding our scone conversation; Keep in mind that if you make mini (or regular) scones, you can shape the scones into wedges then freeze the raw dough. This way you can pop a couple into the oven when ever you feel a scone urge.

I'm a sucker for anything that says pomegrenate. These look so beautiful and would certainly have hit the spot for our oddly hot days.
This smoothie is great!! I actually had some tofu in the fridge and was looking for something different to do with it...great use of ingredients:)
