Andes Chocolate Mint Cookies
I've noticed that all of my posts recently have been about baked goods. Must be because when I'm in school I don't want to take the time to follow a recipe or think too much about what I eat for dinner. But there's always time for baking! Anyway, last summer I saw these Andes chocolate mint cookies on Culinary Concoctions by Peabody. I was dying to make them but where could I find Andes mints?! I knew I'd seen them before but no idea where I could find them. It turns out they're only available around Christmas. Now I'm stocked up with Andes mints for whenever I want to make these again.
Everybody really loved these cookies. They're brownie-like, and even though the mint part only comes from the Andes chocolate on top, it makes the cookie very minty. I thought the cookie could have been more chocolate-y but this recipe is quite delicious as it is. And I was happy to find out that these cookies freeze really well.
Andes Chocolate Mint Cookies
Adapted from Recipezaar
Makes 50-60 small-ish cookies, or 30-40 large-ish cookies.
3/4 cup unsalted butter
1 1/2 cups packed brown sugar
2 tablespoons water
12 ounces semi-sweet chocolate chips
2 large eggs
2 1/2 cups flour
1/2 teaspoon salt
1 1/4 teaspoons baking soda
Andes mint candies, broken in half (about 1 package)
Heat oven to 350°F.
Over low heat, combine butter, sugar and water. Heat until melted and add chocolate chips until partly melted. Remove from heat and stir. Pour into large mixing bowl. Let stand 10 minutes to cool slightly.
Beat in eggs one at a time on high speed. Reduce mixer to low speed and add flour, salt and baking soda. Beat until well-blended. Chill 1-2 hours (dough may be almost liquid before chilling but hardens and is easy to shape after chilling).
Roll into balls, place two inches apart on parchment paper-lined baking sheets. Bake for 10 minutes. Place an Andes Mint half on top. Allow to melt slightly and spread with a spoon.

Good job on the cookies. I didn't know that about Andes. There are some restaurants around here that give them out as you pay. I totally agree with you about there always being time for baking...it's such a good stress relief, isn't it!?
Interesting that you can only get them at Christmas time. I made them last Summer because they are the only mint I can get year round!

Made today and they are VERY good. Such a simple little cookie, not too sweet!
I made these cookies the other day! Absolutely delicious but took a lot longer to cook than 10 minutes. About 20 or so. Also good with a little powdered sugar before baking, crackles the cookie a bit. Thanks for the recipe!
When I last visited my mom, she told me about how much she loved these andes mint cookies, but couldn't find andes mints. I was thinking of buying andes mint via internet, baking these, and mailing them to her.
Would these do well throughout shipping if I pack them individually and tightly?

Jessica: Interesting that they took so long! Mine were really soft when they came out at 10 minutes, so the final cookie is kind of brownie-ish.
Emily: I don't know if these would ship very well because they're meant to be a soft brownie-ish cookie. Personally I'd be scared of them drying out enroute, but then I'm very picky about dry cookies whereas lots of other people don't care. Maybe try another more sturdy chocolate cookie base, and do the melted Andes mint on top of that?

Alice: Unfortunately I've only been able to find Andes mints in Vancouver at Christmas time (at Shoppers Drug Mart, Michaels, Save on Foods). You can find them all year long in the States though.
My first batch is in the oven now.. My husband can not wait to try these! I had bought 2 boxes of the mints to bake the cookies with and needless to say the mints were found and GONE before the cookies were a thought! I am suprised that others are having trouble finding these.. They were a "staple" at Grandma's house in her fridge. (I'd always sneak one!) I find them in a SMALL box wrapped in Girl Scout mint green plastic packaging in the candy isle of my local grocery store chain, Jewel. It's also called Albertson's. There's about 4 ounces of candy total in the box. Thanks for posting such a great recipe.. I can't wait to taste these!
