Tofu Magic
I have been incredibly impressed with How It All Vegan and The Garden of Vegan cookbooks. (I still need to get La Dolce Vegan.) The recipes are usually really simple - too simple to taste as good as they often do. I was looking for something easy to make so decided on "Matthew's Delicious Tofu" not expecting anything out of the ordinary, but it was SO GOOD! Without a doubt one of the best tofu experiences - crispy/hard on the outside, really great flavour, slightly sweet. And of course it was really easy to make. Basically tofu magic.
Matthew's Delicious Tofu
Adapted from The Garden of Vegan
2-3 servings (with rice)
1 lb medium firm tofu, chopped
1 tbsp olive oil
4 cloves garlic, minced
1 tbsp fresh ginger, grated
1/4 tsp chili flakes
2 tbsp maple syrup
2 tbsp reduced sodium soy sauce
1 tsp lemon juice
1/4 cup dry roasted almonds, chopped (optional)
In a medium saucepan on medium-high heat, saute the tofu in oil until browned. Reduce heat to medium-low and add the garlic, ginger, and chili. Saute for 5 minutes. Add the maple syrup, soy sauce, and lemon juice. Cover and cook until the liquid has evaporated. Garnish with almonds if desired.

Hey, I made this tonight, and it was absolutely wonderful! Thanks for the recipe. I added about 8 or 9 roughly chopped shiitake mushrooms at the tofu-browning stage, and added about 5 chopped green onions at the garlic/ginger stage. I served it with quinoa. The almonds were delicious. I think it would be great too with cashews.

Although I eat tofu regularly, I am not a big fan of it... but this recipe for Matthew's Delicious Tofu is the best tofu preparation I have ever tasted! Don't leave out the almonds, because they really add a lot to the final taste. Thanks for sharing this recipe. Best wishes from Salem, Oregon.
This was amazingly good. I used cashews instead of almonds and rice noodles--new favorite meal.

Made this excellent meal tonight. I substituted agave nectar for the maple syrup and threw in some sweet onion when browning the tofu. Served with cabbage instead of rice. Thanks!

So I made this last night for my boyfriend (a meat and potatoes fella) who upon finding out we were having tofu informed me he was not eating it. I put just one bite on his plate requesting that he at least try it. He ended up going back for thirds!!! Excellent recipe!!! I added the shitake mushrooms when the tofu was browning and had to substitute honey for maple syrup.

This was my first time ever making tofu and I loved it! I used honey instead of the syrup and added it to a spicy, orangey, cashew stir fry with wheat noodles I threw together...mmm...delicious! Thanks! I also just found your blog and am very grateful for it. I'm trying to go vegan, at least for a while. Everything looks great! :)

i'd like to make this recipe as a second main course for my vegetarian friends. i'm having 20 people so how much should i make and how much can i do ahead? trying to get as much done ahead as possible.
All I can say is WOW. This recipe is so amazingly delicious! Thanks so much for posting. I don't know how to cook tofu and this just blew me away at how good it was!
